I love cooking things in all kinds of different ways! I had a mate once who diced up some thick chunks of steak, rolled them in a mix of salt, garlic and bay leaves before sticking them on skewers and cooking over charcoal. I would be inclined to try using that seasoning mixture with your technique and see what comes of it! 😀
